Tripe is the edible stomach lining of ruminant animals such as cows, sheep, bison, giraffes, elk and more. Ruminant animals have 4 stomach compartments through which food moves during the digestion process. 
Green tripe is a term used to refer to tripe that has not been washed and still contains remnants of the animal's stomach contents. Although green tripe can sometimes have a green tint due to the greenery these animals feed on, it is most commonly brown.
Our crunchy bison green tripe bits are made using the first and second compartments, which are the most flavourful and nutrient-rich.

Room Temperature: 3 months
Freezer: up to 1 year
Store in a cool dry place and allow for air to circulate. When storing in the freezer, seal in ziploc bag to prevent freezer burn.
